Today Feature : Vegan Lasagna

Tomato Sauce:
- 2 tbsp olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cans (14 oz each) crushed tomatoes
- 1 can (6 oz) tomato paste
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 tsp sugar (optional)
- Salt & pepper to taste
- 1/2 cup fresh basil (optional)
Vegan Ricotta:
- 14 oz firm tofu, drained
- 1/4 cup nutritional yeast
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 1/2 tsp oregano
- Salt & pepper to taste
Lasagna:
- 12-15 lasagna noodles
- 2 cups spinach (or other greens)
- 1-2 cups sliced mushrooms (optional)
- 1 1/2 cups dairy-free mozzarella
- 1/2 cup fresh parsley (for garnish)
Instructions:
- Preheat oven to 375°F (190°C).
- Tomato Sauce: Heat olive oil in a pan, sauté onion for 5 minutes. Add garlic, then stir in tomatoes, tomato paste, oregano, basil, sugar, salt, and pepper. Simmer for 20-30 minutes. Add fresh basil if desired.
- Vegan Ricotta: Blend tofu, nutritional yeast, olive oil, lemon juice, garlic, oregano, salt, and pepper until smooth.
- Cook Noodles: Follow package instructions and set aside.
- Assemble Lasagna: In a 9×13-inch dish, layer sauce, noodles, ricotta, spinach, mushrooms, and mozzarella. Repeat layers and finish with sauce and cheese on top.
- Bake: Cover with foil and bake for 25-30 minutes. Uncover and bake for another 10-15 minutes until golden. Let cool for 10 minutes and garnish with parsley. Enjoy!
Tips:
- Make-ahead: Assemble the lasagna a day before and refrigerate.
- Tofu Tip: Press tofu well for firmer ricotta.
- Add-ins: Add more veggies like zucchini or bell peppers for variety.
